A. Overview

This typical cuisine is originally can be found in Kalimantan, precisely in Hulu Sungai Selatan District, East Kalimantan. The main basic material used to make Boneless Roast Duck is duck alabio, which is famously known as the best duck of all kinds in Indonesia. The culinary entrepreneurs had no trouble getting this kind of duck because the area is known as a producer of duck alabio since long time ago. In addition, the local government also makes the duck as a mascot of the city and then immortalized in the form of a pair of giant duck statue located in downtown of Amuntai city.

Alabio breeding center in the city can be found Paliwara village in Amuntai Tengah District and Mamar village in Amuntai Selatan District. At least about 14,000 families who take the profession as alabio breeders can be found in the both areas. Indeed, this profession has become a tradition that is passed down from generation to generation. Most breeders rely on the sharpness or sensitivity of feeling, especially when they want to select eggs that are intended to be hatched. To distinguish the sex of ducklings, the breeders do not need to use the shots, but enough by touching and feeling the vibration the eggs on barehanded.

The hatching process can be done in two ways, traditional and modern. Using the traditional way, the breeders use a case (barunjung) layered with bran (sekam), while in the modern way the breeders use machine featured with automatic heat lamp. From these ways, alabio is then processed becomes a delicious and special Boneless Roast Duck.

B. Features

Boneless Roast Duck is popular among connoisseurs because of its distinctive which different with other duck dishes from other areas. Its meat is more tender and easy to chew combined with the seasonings and spices absorbed into the meat. Moreover, it is also easy to eat because the bones were already removed during the cooking process.

How to cook the Boneless Roast Duck is unique. First of all, one duck is cleaned and then cut into four pieces. After that, the bones are removed from the meat, and these boneless duck meats are then smeared with lime juice, salt, and pepper, leave it about 20 minutes. Furthermore, the meats are smeared with the seasonings consisting of 10 grains of red onion, 2 cloves garlic, 1 teaspoon coriander, ½ teaspoon cumin, 2 cm ginger, 2 ½ teaspoons salt, ½ teaspoon pepper, and soy sauce to taste. Stir this seasoning together with the meats for less than 2 hours to allow flavors to infuse into the duck meat.

Secondly, the duck meats that have been seasoned are roasted over hot coals until cooked. Once the meat cooked, it is then sliced ​​into small pieces, roughly enough to bite, and poured with the special sauce for roasted duck. This delicious Boneless Roast Duck Roast is ready to serve accompanied with rice and a bowl of warm soup vermicelli noodles and pieces of cabbage. Amuntai is located about 189 kilometers from Banjarmasin. The city can be reached through landline takes about 4-5 hours. Arriving in Amuntai, visitors can continue the trip to the location by public transports majoring Amuntai-Mamar.
