Katupat Kandangan

A. Overview

Katupat Kandangan (also known as Ketupat Kandangan) is a typical culinary of South Kalimantan, Indonesia. The term “Katupat or Ketupat refers to the type of rice cake wrapped in woven coconut leaves, while the term “Kandangan is the name of the capital city of Hulu Sungai Selatan. Since the first time, the area of the hometown of former Indonesian military leader, the late Brigadier General Hasan Basry, is indeed famous for its typical culinary named Ketupat. The precise and balanced seasonings create such a different taste which very delicious and tasty.

Similar with the other Ketupat in general, Ketupat Kandangan is also served with coconut milk sauce mixed with a blend of traditional spices. The difference can be found on the Banjar cuisine that should be served with snakehead murrel (Channa striata). The species of snakehead fish is usually obtained from the marshes in the region of Kandangan.

How to make Ketupat Kandangan is quite easy. First, the fish is cleaned by removing the entrails and scales and then smeared with Java acids to add with a little salt, and leaved for about 15 minutes. After this, the fish is then grilled while turning up and down until cooked.

Furthermore, spices needed to make sauce, including coriander, cumin, pepper, turmeric, galangal, nutmeg, onion, garlic, shrimp paste, sugar, are mashed and sauteed with lemongrass and lime leaves. Once cooked, it is then added with coconut milk together with the fish that has been grilled. To add more the sour taste, it can be added with the remaining water from the fish before being grilled, and leave until well boiled. Katupat Kandangan is now ready to be served with sauce. This typical culinary of South Kalimantan is very suitable to eat at morning, noon, or even at night.

B. Features

Katupat Kandangan has a distinctive taste derived from the combination of spices cooked with creamy coconut milk. It also can be served in two kinds of sauce, namely thick coconut milk and fluid coconut milk, depending on the suitable taste. Visitors who are not bond of thick coconut milk simply can order the food in fluid coconut milk. They may also choose the specific part of the fish, such as the head or the body.

The way to serve katupat Kandangan is similar with Opor (a food dish of stuffed fowl). Pieces of rice cake and grilled fish are doused with a savory coconut milk sauce. To add a savory flavor, the sauce is poured with the fried onion. This food dish is also suitable for you who like the spicy dish because it can also be served with special hot sauce. In addition, to eat Katupat Kandangan is also unique and different from usual. Katupat Kandangan should be eaten without using spoon, but using our hand. Do not worry because the rice cake is easy to handle and the sauce absorbed on it, so it will be much more delicious by hand.

Snakehead murrel has been well known for its high content of albumin, which is good for our health. As we know, albumin is one of the essential proteins needed by human body every day to regulate the balance of water in cells, to provide nutrients to cells, and to maintain water in human body. It is also well known to accelerate the healing process of wounds.

C. Location

Katupat Kandangan can be found in Kandangan city, Hulu Sungai Selatan district, South Kalimantan, Indonesia. Almost in every corner of the city or on the street are found restaurants and food stalls offering Ketupat Kandangan as one of their menu. The famous food stalls which often visited by people is located at Jl. Sudirman and Jl. Ahmad Yani, which is open daily at 04.30 am to 22.00 pm.

D. Access

To reach the food stalls mentioned above is quite easy. Visitors can use public transports, such as buses or taxis, from Kandangan Bus Terminal through the streets mentioned above.

E. Prices

The prices of Katupat Kandangan are varied, starting from IDR 5,000.00 to 12,000.00/portion (November 2011). (Samsuni)
